Prep Time 5 minutes mins
Cook Time 15 minutes mins
Total Time 20 minutes mins
- 2 cups raw pumpkin seeds
- 2 cups toasted unsalted almond slices Be sure to use "toasted" almond slices, not raw
- 2 cups roasted unsalted cashews Use "roasted" not raw
- 2 cups unsweetened coconut chips
- 2 tbsp honey
Preheat oven to 350 degrees.
Spread two cups of pumpkin seeds out evenly over a baking sheet.
Bake pumpkin seeds in the oven for 7 minutes to lightly toast them (oven temps vary, so you may need to check them before 7 minutes. You'll know they have been in long enough when some of the pumpkin seed edges just barely start to turn light brown).
Pull the baking sheet out with the pumpkin seed and add the sliced almonds, cashews, and coconut chips to the baking sheet.
Gently mix all the nuts and seeds.
Drizzle half of the honey over the mixture.
Gently stir everything to mix the honey in with the nuts and seeds.
Drizzle the remaining half of the honey and mix again.
Put the baking sheet with the pumpkin seeds, sliced almonds, cashews, and coconut chips into the oven for 8 minutes (take a quick peek after 5 minutes to make sure the granola is not getting too crispy.
Let fully cool and then store in an airtight container.
