Zucchini Banana and Oat Pancakes

Delicious, wholesome, gluten-free zucchini banana oat pancakes. It's easy to whip up a batch of these kid-friendly pancakes that call for only 4 ingredients. These healthy pancakes are a great choice for breakfast or an afternoon snack.

  • 1 high speed blender
  • 1 large stovetop pan
  • 1 spatula

Ingredients
  

  • 1 banana
  • 1 small zucchini or 1/2 a larger zucchini
  • 1/2 cup rolled oats make sure oats are made in a gluten-free facility if on a strict gluten-free diet. You may need to add more oats if you add too much zucchini to thicken the batter. You'll know the batter is too runny if the pancakes are falling apart as you try to flip them.
  • 2 eggs

Instructions
 

  • Cut raw zucchini into 1/2 inch thick slices (to ensure the zucchini blends well).

  • Add peeled banana, zucchini, oats, and eggs to a high-speed blender.

  • Blend all ingredients until the batter has a smooth consistency.

  • Butter and heat a large stovetop pan on medium heat. Make sure the pan gets nice and hot (the butter starts to bubble).

  • Reduce the heat to low-medium right before pouring your first round of pancake batter on the pan.
  • Pour batter in small dollops (1 heaping tbsp worth/pancake). Smaller pancakes cook better with this recipe.

  • Cook the pancakes on one side until you see small bubbles (about a minute if your pan is nice and hot).

  • Flip the pancakes and use the back of the spatula to squish them down. This helps ensure the pancake is thoroughly cooked.

  • Cook until the other side of the pancakes are lightly golden brown (about a minute if your pan is hot enough).

  • Remove from the pan onto a plate and let cool for 5 minutes before serving.
