Kid-Friendly Zucchini Banana Oatmeal Blender Pancakes
These blender oatmeal pancakes with zucchini are a great healthy breakfast for kids and adults alike.
I started experimenting with banana pancake recipes when my first-born was a toddler. 5 years later, I’m still making them and have perfected my recipe!
My kids (1 and 5 years old) love these homemade pancakes. Together, they will eat a double batch in one sitting. I find this pretty impressive, given that it is the equivalent of 4 eggs, 2 bananas, 1 cup of rolled oats, and 1 zucchini!
That’s a protein (eggs), a whole grain (oats), a veggie (zucchini), and a fruit (banana) all in one tasty meal! The banana serves as a natural sweetener in these pancakes, so they do not even need any maple syrup.
If my kids seem distracted or are in a picky eating phase, I will throw some chocolate chips into the batter. This always gets their attention and leads to empty plates and full tummies!

Zucchini Banana and Oat Pancakes
Equipment
- 1 high speed blender
- 1 large stovetop pan
- 1 spatula
Ingredients
- 1 banana
- 1 small zucchini or 1/2 a larger zucchini
- 1/2 cup rolled oats make sure oats are made in a gluten-free facility if on a strict gluten-free diet
- 2 eggs
Instructions
- Cut raw zucchini into 1/2 inch thick slices (to ensure the zucchini blends well).
- Add peeled banana, zucchini, oats, and eggs to a high-speed blender.
- Blend all ingredients until the batter has a smooth consistency.
- Butter and heat a large stovetop pan on medium heat. Make sure the pan gets nice and hot (the butter starts to bubble).
- Reduce the heat to low-medium right before pouring your first round of pancake batter on the pan.
- Pour batter in small dollops (1 heaping tbsp worth/pancake). Smaller pancakes cook better with this recipe.
- Cook the pancakes on one side until you see small bubbles (about a minute if your pan is nice and hot).
- Flip the pancakes and use the back of the spatula to squish them down. This helps ensure the pancake is thoroughly cooked.
- Cook until the other side of the pancakes are lightly golden brown (about a minute if your pan is hot enough).
- Remove from the pan onto a plate and let cool for 5 minutes before serving.
